Hua Mui Restaurant, established in 1946, is one of Johor Bahru’s oldest Hainanese restaurants, with over 70 years of history.
Founded by Mr. Chiang Kia Boon , from Hainan, China, it has preserved Authentic Hainanese Flavors while blending Malaysia’s diverse culinary culture, creating a distinctive Nanyang style. Today, it stands as a symbol of Johor Bahru’s, and Malaysia’s, rich culinary heritage.
The Origin
Not just a dish. It’s history on a plate.
When the Hainanese migrants arrived in Malaya, there was no such thing as Hainanese Chicken Chop back in China.
But working as chefs for British officers, they picked up Western cooking—gravy, fried chops, roasted meats.
One day, someone thought: “Why not mix both worlds?”
And that’s how it began — a golden, crispy union of cultures on a plate.
Golden-fried boneless drumstick, drizzled with house-made Hainanese brown gravy, served with potatoes and tomato.
East meets West, and the rest is delicious history.
Royal Blessing

At Hua Mui, we’ve always believed that true flavour speaks for itself—across generations and cultures.
But when that same flavour is recognised by royalty, it becomes a legacy.
In 2017, His Majesty the Sultan of Johor visited our original outlet for the very first time.
We still remember the quiet excitement, the sense of honour, the way our team prepared every dish with extra care.
In 2025, His Majesty returned — twice.
By then, our crew knew the rhythm: warm service, signature chicken chop, and humble smiles from a team who grew up with this heritage.
Each visit reminded us:
Good food brings people together. Great tradition earns respect.
A royal blessing. A Johor icon.
These moments are more than milestones — they’re symbols of trust, tradition, and timeless Malaysian hospitality.
2019
When Everything Stopped,
We Moved Forward
“This is what makes Hua Mui different — tradition that moves forward.”
During the first days of lockdown, our Jalan Trus shop fell silent.
No customers. No kopi. No laughter.
For the first time, we feared — this could be the end of Hua Mui.
But we didn’t give up.
As a family, we stood together.
Cousins, brothers, team members — we rolled up our sleeves and made it work.
We adapted. We delivered.
From fear came strength.
From tradition, innovation.
Even a kopitiam born in 1946 can move with the times — when you have heart, heritage, and family. ❤️
2023 to 2025
A Halal Journey of Trust
Halal-certified from kitchen to branch — building trust in every bite.
In Malaysia, food is more than nourishment.

In 2023, our central kitchen was officially certified Halal by JAKIM.
It was more than a certificate — it was a milestone for a humble kopitiam rooted in tradition since 1946.
A proud moment for our team, our customers, and our community.
In 2024, our first Halal-certified outlet opened its doors.
Families of all backgrounds could now enjoy our signature dishes with confidence and comfort.
And in 2025, as we expand to new neighbourhoods and communities, we carry more than just recipes —
we carry a spirit of unity, built on trust, flavour, and shared Malaysian pride.
